FENUGREEK AND POTATOES

I love carrots - most people don’t - but they saved me when I did a body building competition as they replaced most of the carbs I wasn’t allowed. They are versatile, cheap and you can do so much with them. Give this recipe from Nigel Slater a whirl and you never know, you might find yourself eating a few more of these vibrant sweet and most delicious of vegetables.
