Recipes -


½ cup Shao Hsing wine 
4 tbsp oyster sauce  
2 tbsp caster sugar 
2 tbsp Kecap Manis (sweet thick soy sauce) 
1 tbsp sesame oil 
1 tbsp fish sauce 

4 fillet steaks 
3 tbsp vegetable oil 
2 cloves garlic crushed 
2 tbsp salted blackbeans, rinsed drained and lightly mashed 
1 tbsp dark soy sauce 
1 tsp sugar 
1 tbsp Shao Hsing wine 
1 tsp sesame oil 


To make marinade, place wine, oyster sauce, caster sugar, kecap manis, sesame oil and fish sauce in a bowl and stir to combine. Add beef to marinade and turn several times to coat and cover. Refrigerate overnight or a minimum of 4 hours. Drain. 

Heat 2 tbsps of oil in wok over high heat. Sear steak for two minutes and set aside. Heat remaining oil, add garlic and fry for 30 seconds, add blackbeans, soy, sugar, wine and 2 tbsps of water. Bring to the boil, lower heat and simmer for 5 mins. Stir in sesame oil and remove from heat. 

To serve slice fillet steaks finely and pour sauce over individual portions. Serve with favourite green and rice.
